  • Taste of Shanghai – A Guide to Shanghai’s Best Food

    From delicious local dumplings to international fine-dining fare, the restaurant scene in Shanghai has never been better as the largest city in China gears up for the World Expo 2010 starting May 1.

    Fast-paced and forward-looking, Shanghai is China’s most energetic city, and nowhere is its dynamism and spirit of adventure more apparent than in its restaurant scene. In the last decade, dining in Shanghai has changed out of all recognition. True, you can still buy bowls of noodles on street corners – thankfully – but in restaurants, trendy youngsters are likely to be munching on French fries while Shanghai’s nouveau riche splurge on fine-dining restaurants serving dishes from around the world, and fashionistas knock back lurid cocktails to a backdrop of neon-lit views. Big, brash and better than ever, dining in Shanghai is now the equal of that in any modern western metropolis.

    By all means, start at street level: cheap and informal eats are everywhere. At stalls and corner restaurants across the city, you need only spend a few dollars to get popular snacks such as pork dumplings, egg pancakes, lamb skewers – grilled to order by Muslim immigrants from northwest China – and leek pies. You can get memorably good bowls of noodles and delicacies such as frogs’ legs in ginger or slices of roast duck on rice. But nothing beats xiao longbao, a Shanghai dumpling filled with a delicious broth that explodes into your mouth (or, if you aren’t careful, over your clothes) as you bite into it.

    Local snacks are wonderful, but you’ll have to head to a restaurant to try Shanghai cuisine at its best. Little-known in Australia, Shanghai food is really a branch of eastern-style cuisine, and features braised and stewed dishes rather than stir-fries as well as cold ‘drunken’ dishes marinated in wine, of which drunken chicken is the best known. The emphasis is on the freshness of the main ingredients rather than on heavy sauces and marinades. Freshwater fish is prominent, though expensive, and the much-loved local delicacy is hairy crab – known locally as duza ha, or in Mandarin, dazha xie, meaning crabs from the “big dam”. Duza ha is usually steamed and dipped in soy sauce and black rice vinegar with ginger. The Shanghainese like to wash down their meal with a sweetish, yellow rice wine known as huangjiu.

    It isn’t hard to find superlative restaurants in Shanghai: the Chinese bring relatives and business partners to the city’s restaurants to impress them with lavish feasts. Many restaurants cover several floors, each floor offering menus at different price points. Foreigners are invariably directed to more expensive floors in the belief that they’re used to luxury, but there’s nothing to stop you joining locals on the cheaper (usually lower) floors, where you can expect a raucous din of happy diners.

    If you’re after the best local flavors, head to Shanghai Uncle in the basement of the Bund Centre. Shanghai Uncle goes for modern versions of old Shanghai classics and inspired east-west fusion dishes, and is certainly some of the best Chinese food you’ll eat in town. Try the superlative crispy pork, traditional smoked fish and handmade noodles and, if you can afford the astronomical prices, a fresh lobster dish.

    For excellent Chinese comfort food in less formal surrounds, look no further than the queues outside Crystal Jade Restaurant in Xintiandi. Locals flock here for steamed dumplings, roast pork buns and spicy Sichuan noodles. The restaurant is reckoned to serve the best xiao longbao in Shanghai – in other words, in the known universe.

    Villa du Lac, housed in an old colonial building, is also one of the city’s top restaurants for Shanghainese cuisine, as well as palace cuisine from the nearby city of Yangzhou, its light, clean flavours once reserved for royalty and court officials. Signature dishes include hand-cut tofu and drunken chicken; European-influenced desserts include egg tarts served with Longjing tea and snow-skin peach dumplings in champagne. The chef here, Justin Quek, hails from Singapore, and has an international reputation.

    Many a world-class chef has been lured by Shanghai’s bright lights, and the Shanghainese love of trends and fashions. It all started along The Bund, where Art Deco and Neoclassical facades recall Shanghai’s heyday as a great trading port and international settlement in the early 20th century. The municipal government launched an enlightened program of restoration in the 1990s that has seen The Bund return to its former grandeur and bustle.

    M on the Bund was the first international restaurant to open here, in 1999 and, for some time, was the place to be seen in Shanghai. Its star has faded somewhat as newer competitors steal the limelight, but the Art-Deco elegance and wonderful views from the seventh floor are hard to beat, and the food can still reach superlative heights. Signature dishes are the slow-baked leg of lamb and pavlova – no surprise, really, as chef-owner Michelle Garnaut hails from Melbourne.

    Next door, Three on the Bund is a seven-storey pleasure palace housing art galleries, luxury boutiques, a jazz club, a day spa and several restaurants of top international quality. These include French fare at Jean Georges, bistro fare at New Heights, and classic-meets-contemporary Shanghai cuisine at the Whampoa Club – try the tasting menu, and talk to the tea sommelier about choosing a matching tea. Another Australian chef, David Laris, is at the helm at Laris, with its emphasis on New World seafood dishes.

    Given the high prices at Three on the Bund, you might expect serving sizes to be a bit more generous and service more suave. Nevertheless, dining at one of these trendy restaurants on The Bund is a quintessential Shanghai experience. If you really want to splash out, you can reserve the cupola on top of the building as a private dining room, and order from any of the restaurants on the floors below.

    Xintiandi is another trendy locale and the evening destination of choice for hip locals and expats alike. This upmarket area of little alleys and courtyards is an appealing blend of modernistic and faux old Chinese architecture, crammed with eateries and bars of all sorts, from hugely busy, German-style Biergartens to Tuscan pizzerias and chic post-modern venues serving the likes of green-pea cappuccino.

    At Lan Na Thai, in a lovely old colonial mansion known as Face Building, delightful deep-fried soft-shell crab and divine papaya salads are served up to a mostly foreign clientele; on another floor, svelte guests recline on ‘opium beds’ in an Asian-style cocktail lounge. At Di Shui Dong, try the outstanding spicy regional Hunan cuisine: everything from chicken chilli hotpot to cumin pork spare-ribs is wonderful, even if it needs to be washed down with copious amounts of cold beer.

    The wide, tree-lined avenue known as Hengshan Road, just a totter west, is another trendy spot lined with 1920s mansions, now converted into teahouses and restaurants. It’s also home to one of the city’s favoured music venues, O’Malleys. With an outdoor courtyard and cosy, Irish-pub style, O’Malleys serves up a good beer and Irish, British and American favourites – just the place to head for if you have a hankering for bangers and mash.

    In the old days, this area was part of the French Concession. There’s still a nod to the glamor of these times at 1931 Bar & Restaurant, where waitresses are dressed in traditional qipao, or high-collared, tight-fitting silk dresses with side slits. This is the place for a drink and nibbles – fried dumplings, duck pancakes and noodles. Also worth a visit is the Art Salon, where Montmarte meets Shanghai: the walls are covered with local artworks; rickety tables and traditional Chinese-style chairs crowd every inch of floorspace. Sit elbow-to-elbow for some terrific homemade specialties – and feel free to purchase any of the artwork or furniture that catches your eye.

    During the days of the settlements, the Chinese lived crammed into the old city; now, Shanghai’s historic heart has been redeveloped into an unabashed tourist theme town, jammed with souvenir shops and antiques markets. At its centre lies the fabulous Yu Garden and iconic Bridge of Nine Turnings, a zigzag bridge over a carp pool always packed with photo-snapping visitors. Stop by the venerable Huxinting Teahouse in the middle of the pond for a pastry or quail’s eggs with excellent green tea as you watch the passing hubbub.

    You’ll also find fine fare at the Shanghai Classic Restaurant, which serves such local dishes as eight-treasure duck, stuffed with sticky rice, and deep-fried shrimps. The restaurant claims to have been around since 1875, though in its current guise, it is located on the second-floor atrium of a modern mid-range hotel.

    Occasionally, someone in this relentlessly advancing city actually looks to the past. If you’re after a coffee, avoid the ubiquitous Starbucks and head instead to Old China Hand Reading Room, with its Qing Dynasty furniture, old books, manual typewriters and beautiful photography, or to Old Film Café, where you can watch 1920s movies from China and Russia as you down your brew. Just the caffeine shot you’ll need before launching yourself into the frenzy of Shanghai once more.

    • My latest experience was in Shanghai, where I had the pleasure of dining at The Whampoa Club. This restaurant is an opulent setting for Jereme Leung’s modern interpretations of traditional Shanghainese cuisine. Contemporary Chinese or Chinese Fusion are the other names that this type of cuisine, goes by.

      The entrance to the Whampoa Club is in the side street off the Bund. You walk past the up-market Armani store then enter a darker smaller road. You will then see the Whampoa Club sign… take the elevator to the fifth floor where you emerge into a startlingly opulent gilded gold and red lobby/holding area. There is a huge, modern crystal chandelier that dominates this room. As you walk through the long corridor, you will notice two extremely pretty ladies playing traditional Chinese music instruments.

      You will have a gorgeous view of the Pudong district, i.e. , the Bund from where you sit and appraise your menu. Tonight, we decided on the degustation menu priced at RMB688 per person – this is before you add on the wine and champagne.

      We had the trio starter of old fashioned shanghai smoke fish, chilled drunken chicken in shaved ice and trio marinade in glutinous rice wine brine. Exquisite.

      Next up was the soup of crab claw, double boiled in duck, chicken and pigeon stock. This totally knocked our socks off.

      Then came to dynamic duo of steamed cod fish with ‘Ji’ vegetable and Crispy king prawn flavoured with crispy milk and oat flakes. The sweet king prawn tempered the salty cod fish to perfection.

      Then, as if to remind you not to forget that the Chef is in tune with European trends, enter the Pan-seared Australian Wagyu beef with pistachio nuts. The beef melted in our mouths and the pistachio complemented its gamy taste to perfection. This was my favourite of the night.

      The assorted mushroom handmade noodles in X.O. sauce was a real winner too. Perfectly al-dente and luscious to taste. I loved the heavy-handed way in which they added the X.O. wine… superb!

      For the grand finale and dessert, we had the yogurt and strawberries ice-cream with seasonal fruits. A great end to the night.

      I have been told that the prices here at Whampoa Club, would make some of China’s finest choke, but where else then can one go for Chinese food with quiet, yet impeccable service, breathtakingly stylish design and food that will have one surreptitiously licking ones plate! Whampoa Club is a very serious restaurant serving some perfectly cooked food and we would gladly recommend this reatuarnt to anyone who enjoys exquisitely good food!

    • Nan Xiang Man Tou Dian (85 Yuyuan Lu, 021/6355-4206)): unassuming dumpling restaurant on every tourist’s to-do list in Shanghai. What they all come for is the award-wining Nanxiang Xiaolongbao (RMB12/$1.7 for a steamer of 16 dumplings), steamed pork dumplings with delicious broth that squirts all over the moment you bite into the wrapper. There’s a picture menu to help in ordering.

      Mr and Mrs Bund, in the location of the former Sens & Bund, is a new French eatery by Paul Pairet who is making a big comeback after hanging up his apron as Chef de cuisine at Jade on 36.

      Excellent Food. Great View – very confusing menu and thank goodness for the first-timer menu! The ambience is casual and so not so approriate for business dinner. We enjoyed the experience – it wasn’t cheap (esp that glass of wine!!!) but the food will call for your return again!!!

    • First went to Jade on 36 in Pudong Shangri-La hotel at the end of ’08 when Frenchman Fabrice Giraud took over with the departurre of Chef Paul Pairet to create his own restaurant “Mr & Mrs Bund”… unplanned, we weren’t even sure what to expect. We came away impressed, their choices of set menus were different, the food outstanding and explanation of each dish by the staff was insightful. While some may have found the explanations intrusive, it was a journey of discovery, we found it delightful… it was different. As global travelers to capital cities in the high tech business, we have been to great restaurants … this easily made our top 5. We went back a few nights ago for a special occasion … but it’s changed, gone is the set menu and its variety, it’s now just another high end restaurant. The food was well presented but so-so … at best … the lobster died in vain for my lobster bisque. The drinks were very nice. The service was uneven, alternately over attentive and missing. It took 30 min to pay by credit card after receiving the bill. They comped us coffee/tea as a consolation. … View, blow me away but not enough i guess….

    • Perennially popular and a good place for light lunch, Element Fresh hits the spot with pasta dishes, healthy salads and hefty sandwiches. Its recently expanded dinner menu features such tasty options as sesame-crusted tuna steak and grilled red curry grouper, while vegetarians may well faint with excitement at the roasted eggplant on walnut bread with mozzarella and olives. There are imaginative smoothies, fresh juices, coffee and after-work cocktails. It’s nonsmoking inside.

    • Crystal Jade Restaurant is a great place for dim sum, their xiaolong bao dumplings may be the best in Shanghai. I don’t understand why people go to the crowded, run-down Xintiandi Chrystal Jade when just a few blocks north down the escalator in the Hong Kong New World Plaza building at the northeast corner of Huaihai Rd and Madang Rd. there is a larger, much more attractive Crystal Jade with the same menu but better service and decor! Must-tries include Shanghai steamed pork dumplings (the aforementioned xiao long bao), dan dan mian in Sichuan style (noodles in a spicy peanut broth), and shrimp dumplings. English menu. Reserve in advance or risk a long wait.

      Somewhere between Gotham City and new Shanghai is Jean-George Vongerichten’s dimly lit, wood-floored, copper-appliquéd temple to gastronomy. The French-born Manhattan chef knows how to skim the cream off the city’s expanding economy, no doubt about that, but you get the culinary adventures you pay for. Palate-pleasers include black cod with sesame seeds and citrus, a foie gras brule and an excellent soft shell crab.

      And don’t forget the dessert plates. If you want a table with a window view, book a week ahead.

      Justifiably popular and ever-expanding chain of Thai restaurants, Simple Thai, (5c Dongping Rd, French Concession) serves reasonably priced classic dishes such as green and red curries and Tom Yum Soup and quirky ones like the Thai-style straw mushroom salad with mango. This branch has a nice tree-shaded patio, perfect for alfresco dining in the warmer months. They deliver, too.

      A less intimate branch is at xintaindi (6326 2088; cnr Madang Rd & Xingye Rd) or there’s one in Hongqiao (6465 8955; House 28, Lane 3338, Hongmei Lu Entertainment Street).

    • 1221 – No one has a bad thing to say about this smart expat favorite and rightly so, as it’s never let its standards dip over the years. The roast duck is excellent, as are the drunken chicken and beef with dough strips. The pan-fried sticky rice and sweet bean paste (from the dim sum menu) makes a good dessert. It’s also worth ordering the eight-fragrance tea just to watch it served out of 60cm-long spouts. You’ll need to drive. English menu. Reserve.

    • Di Shui Dong is the discerning local’s choice for fiery Hunanese cooking. It’s a refreshingly unpretentious and friendly place serving consistently good and authentic food. Try the chicken and chilli claypot or the classic boiled frog and cool down with plenty of beer. Milder dishes include spare ribs and braised spring chicken with ginger, plus the crowd-pleasing caramelised bananas for dessert. English menu. Reserve.

    • Dark, moody, and sleekly sophisticated, Lost Heaven serves a rich fusion of regional Yunnanese and Burmese cuisines with a noticeable Thai kick. The three-floored interior is dressed in dark woods, red lanterns, Southeast Asian artifacts, and Yunnanese stone face masks. A two-floor shrine on the back wall is made from dried pu’er tea leaves. Unsurprisingly, it’s a see-and-be-seen hot spot for local celebs and visiting movie stars from Hong Kong. An extensive menu has garlicky and lemongrass-infused seafood and meat options. For extra spice, try the Burmese curried vegetables, and for regional authenticity the flavorful dishes incorporating Yunnan’s famed mushrooms. The first-floor Mask lounge offers ambient DJ tunes, boudoir chamber beds, and more spot-lit stone masks.

    • You certainly don’t come to this small eatery called Jia Jia Tang Bao on Huanghe Food Street for the ambience (there is none) or a variety of menu options (everyone has the same) – what you come here for is one of the top contenders for Shanghai’s best xiaolongbao dumplings, here called tang bao, or pork soup dumplings. What you do is pay the lady 7RMB, wait for a seat at the Formica communal tables, and eventually receive a steaming steamer-full of delicious dumplings. As always, eat these cautiously, as the boiling soup inside can scald easily. Do like locals do: Hold one on a spoon and gingerly nibble off the top to let the steam out before greedily gobbling it down.

    • Hamilton House, a French brasserie and bar occupying the ground floor of a 1930s Art Deco tower, pays homage to Shanghai’s stylistic history. The subtle Deco interior—created with the help of Shanghai couturier Lu Kun—is perfectly pitched, and the entire venue, from a spring-loaded wooden entrance door with a sign saying “Treat me carefully, I am more than 70 years old” to period furnishings and a long wooden bar that morphs into the staircase banister, evokes the romance of 1930s Shanghai. The set menus at lunch are excellent value, and dinner offers refined, fusion-free European fare, such as pickled sardine fillets or grilled pigeon.

    • Housed in the elegant 1930s villa that used to house the British consulate, YongFoo Elite is one of Shanghai’s most exclusive spots. Ever since it opened in 2004, the YongFoo Elite has become a favorite haunt of the city’s socialites and important visitors. Its VIP list has catered to the likes of Vivienne Tam, Karl Lagerfeld and Yao Ming as well as Hollywood superstars Jackie Chan, Maggie Cheung, Ralph Fiennes, Tom Cruise and Sharon Stone.

      Located in the old French Concession, the rambling building abounds with Buddhist statues, antique Chinese furniture and green leather sofas. The garden is a divine spot to sip a G&T, reclining under magnolia trees with the stars glinting above. The restaurant serves up decent Euro-Asian cuisine, but the food was always going to come second to the atmosphere here. Order a cocktail and take a wander onto one of two gorgeous verandahs. A members’ bar, it has an exclusive air, with guests required to sign in at the foot if a long driveway.

      El M en el Bund es un que no debes perderte. Este restaurante es fantástico! El servicio es muy atento. El menú tiene mucho que ofrecer en cuanto de opciones para todo el mundo.       Sasha’s, en una casa exquisita colonial en el sector francés, donde sirven churrascos deliciosos y puedes beber “Casita del Diablo,” entre otros vinos chilenos. Pero si lo que se deseas es visitar un “bistrot” mejor ir a New Heights (“Three on the Bund”) donde se encuentra todo tipo de comida internacional, tailandesa, indonesia, americana y francesa.

    • True Shanghai food is a world away from what you get at home in paper take-out cartons. The best place to try local eats is Xin Jishi Restaurant (Jesse’s Restaurant), which has several locations around Shanghai. My favorite place is the one in Xin Tian Di (Building 9, No. 2 Alley 181 Taichang Road, Xintiandi beili, 021-63364746), where it is housed in a little old stone shikumen, a traditional 1930s Shanghai home. The whole area of Xin Tian Di is meant to be a rejuvenated commercial and culinary area. The location in Xin Tian Di also looks out to the magnificent Peace Mark-Tourneau store with its luxury watch displays.

      The first dish we had was an appetizer of stuffed red dates. These had been steamed and then stuffed with a ground mixture of glutinous rice. It was really interesting, a savory and sweet mixture, kind of bulbous and satisfyingly chewy to boot.

      We had a whole bunch of smaller dishes to follow, the long beans, the cold tofu, which I love and these little duck skin pancakes with tiny capelin roe. I was impressed at the speed of the service, the tastiness of the food and the detail in presentation.

      The fourth dish was quite peculiar, it’s a clear glass noodle, but served with a thick crab mixture, made from the hairy crabs that Shanghai is so known for. The crab and crab roe sauce is thick and a bit gooey, it’s a good contrast to the noodles but a bit too heavy for my taste.

      The last dish was my favorite and it’s what I wound up eating the most often. I think it’s called Kao Rou, or spare meat, it’s really layered pork that’s been braised and then steamed in these old-fashioned pots, until the brown sauce has been infused through the meat and also the fat of the pork, rendering it translucent in layers. It was irresistible and also terribly bad for you! Yummy, Yummy…

      Din Tai Fung . 123 Xing Ye Lu, Xintiandi, 00-86-21-63858378. Din Tai Fung is actually a Taiwanese restaurant with branches all over Asia, but its Xiao Longbao (soup-filled dumplings) are so good it’s worth recommending a visit. It’s always packed so you have to wait, but it’s worth it. Kick off with cold dishes, ideally tossed tofu with seaweed and bean sprouts, or cucumber with chilli and garlic, then head for a selection of the soup-filled dumplings or some pork and shrimp dumplings, and a freshly sautéed green vegetable. You will not be disappointed. €18 per person.

The wine list generous, the atmosphere warm and comfortable, and the view from the roof over the Bund is spectacular. About €40 per person with wine.

Sasha’s is a restaurant and bar in the centre of the former French Concession in what used to be the home of the Soong family, one of China’s most famous political dynasties. Three daughters of Charlie Soong – Ai Ling, Ching Ling and Mei Ling – married HH Kung, the richest man in China, Sun Yat Sen, the first president of the Chinese Republic, and Chiang Kai-shek, the nationalist “Generalissimo”. The bar and restaurant are great, but if you get the right weather, the garden is the place to hang out. Brunch at €22 a head is a great deal.

      1221 . 1221 Yanan Xi Road, 00-86-21-6213-6585. This is a classy and tasteful Chinese restaurant serving great Shanghaiese food, including classics like drunken chicken, crispy tofu and smoked fish. The price is astonishingly inexpensive for what you get.

      Three on the Bund . 3 Zhong Shan Dong Yi Lu, 00-86-21-6323-3355, threeonthebund.com. This is a classy French restaurant, boasting great food from the cuisine of Jean-Georges Vongerichten. The wine menu is comprehensive and the food sophisticated. As to price, well, it’s upwards of €50 per person.

    • The Waldorf Astoria Shanghai on the Bund has announced that the first of its two buildings, the Waldorf Astoria Club, will open this summer, with reservations now being accepted for September 15, 2010 and beyond. The club is located on the famous Bund in Shanghai and is in the home of the former Shanghai Club, an exclusive club originally built in 1911. The neo-classic architectural gem has been restored to its former glory, with designers using archival photographs and historic records as a reference guide.

      Dining at Waldorf Astoria Shanghai on the Bund is meant to mirror the fine dining available at the Waldorf Astoria New York. There are two restaurants as well a lounge and a bar.       Xindalu is still the best place to get Peking Duck in Shanghai and has been since it opened in 2008, despite a Hongkou district address in Hyatt on the Bund. The restaurant imported a seven-ton brick oven and chefs from Beijing, so there is no question regarding authenticity. The lure of the duck attracts celebrities and salivating foodies alike to Xindalu’s open kitchen.

      A Shanghai Bund fixture and one of the first international quality restaurants in the ‘Hai, the exhaustive list of celebrities who have dined at M requires its own section of the website.       An exclusive members-only retreat nestled in a quiet part of French Concession, the estate of Yongfoo Elite feels like it’s straight out of an old photograph.       At Jesse’s, the sublime Shanghainese food often comes with a side of Shanghainese attitude. Perhaps it’s because the waiters are used to serving Hong Kong movie stars. According to an employee, Chinese model and actress Shu Qi is a co-owner, and she likes to bring her friends. For mere mortals, this tiny restaurant requires advance reservations every night of the week (unless you are going after 9 p.m.).

      Chu Fang 88 (aka Kitchen 88)
      Chu Fang 88 is located on the competitive Dagu Lu strip, hardly noticed by most passersby as they hurry towards Papa Mario’s. The cuisine is modern Chinese, while the interior is almost Bellagio-like with its crystal accents, leather and dark wood. There’s even a wall filled with the signatures of celebrities who have dined at Chu Fang 88. The food is fine, but the restaurant survives because it’s one of the few venues that doesn’t cook with MSG and due to its famous owners, Hong Kong power couple Tony Leung and Carina Lau.

      If you’ve been on Yan’an highway, you’re bound to have noticed the neon red signage for Xiao Lu Lu, a well-established Shanghainese restaurant. Next time, ask your taxi to pull in and keep your eyes peeled for Shanghai TV station big wigs and the posse of TV stars. They patronize Xiao Lu Lu for its late hours (it’s open until 4 a.m.) and convenient location just off of Yan’an highway.

      Executive chef Eduardo Frausto strongly recommends two dishes at Renaissance Yangtze – the Avocado BLT Sandwich and London Calling, which is the hotel’s version of the old British favorite fish and chips.

      Using fresh avocado, fresh tomato slices and lettuce, the chef toasts the bread. He then adds mayonnaise and adds layers of bacon and vegetables. The avocado BLT is served with a side of French fries.

      For London Calling, the chef makes the batter out of flour, cornmeal and salt.

      Frausto has worked at La Poularde, a two-star Michelin restaurant, catered for dignitaries of the Qatari Royal family and managed JW’s Steak House in the Marriott Doha, Qatar.

      There are two major chains serving popular Shanghai style cold noodles. One is the Dexing Noodle Restaurant chain with almost 20 outlets around Shanghai (one location is 529 Fujian Road Central, close to Beijing Road East, 6360 2866). Here customers can choose their own toppings; everything from the kaofu (dehydrated roasted bran, popular in Shanghai family cooking), to mengti (braised sliced pork), and xiaohuangyu (deep fried yellow fish). The Beiwanxin Restaurant chain, with five locations in Shanghai(one location is 462 Huaihai Road Central, close to Chongqing Road South, 6385 5284), is another popular destination. The san si lengmian (three shredded salad noodle) is Beiwanxin’s house speciality.

      Korean Cold Noodles
      The best known Korean cold noodle restaurant in Shanghai is probably Pang Ayi (Fat Auntie, 99 Zhapu Road, close to Tiantong Road), named after its owner. The gaoji lengmian (premium cold noodle) at 15 yuan ($2.20) is a must-try. They use buckwheat noodle with spam, sliced beef, egg, pear, and cucumber as toppings.
      The Benjia Korean Cuisine (1339 Wuzhong Road, close to Jinhui Road.
      5118 2777) is at the higher end of the cold noodle market. And unlike Pang Ayi, this restaurant uses crushed ice in its soup.

      Japanese cold noodlets
      For the best buckwheat cold noodles, try the mocha flavor from the Itoya Japanese Restaurant (1F, 1515 Nanjing Road West, close to Tongren Road, 5298 5777). A generous amount of dried sea-lavers are added to the soup, with a little shallot and a lightly poached egg.
      Taya Restaurant (1F, Building B, No 299 Xianxia Road, Close to Gubei Road, 6270 0253) on Xianxia Road may just have the best udon noodles in Shanghai. It has a wide selection from Kijoyu udon (served in a cold soup of unpasteurized soy sauce and sudachi juice, with tempura and fried tofu as an accompanying side dish), to curry udon, and the Hiyashi chukka (made with raw ramen noodles and served with lots of sliced toppings such as omelette strips, ham, chicken breasts, cucumber and bean sprouts).

      Hot on Shanghai’s foodies’ lips aren’t Sichuan chillis, but the opening of casual, convivial Mod Euro resto Table No. 1 by Jason Atherton. Why?       No doubt about it, meat imitation is an art form at this purely vegetarian upscale supper club.       Wang Bao He Restaurant

      Bills itself as the “king of crabs and ancestor of wine”, this venerable restaurant in the heart of the city near People’s Square has been open since 1744. Its fame rests on its extravagant selection of crab dishes, all of which can be washed down with Wang Baohe’s own special Shaoxing-style “yellow” wine. The place comes into its own during hairy-crab (a grey freshwater crustacean, mitten crabs in the West) season between October and December, when it’s crammed. Food critics describe it as a delicacy on the order of foie gras. Local lore states that the sweetest crabs hail from the dark depths of nearby Yangcheng Lake in Jiangsu Province; if they’re in season, the tender flesh—as well as the orange roe or the sticky gray sperm—will be featured in dumplings, stir-fries, and other dishes in multicourse banquets.     • Laris, the landmark fine dining restaurant on the Bund, is closed along with its popular Vault Bar on November 14, amid claims of a dispute over the running of the restaurant involving its creator David Laris and operator Three On The Bund.

      The high profile restaurant has become synonymous with the luxury retail complex, having been a key draw card since Three On The Bund was launched in 2003. Although down a venue, the Laris empire is busy at work with Downstairs at URBN hotel, Fat Olive and Purple Onion all busy. Fat Olive is opening a second venue in Sinan Masions.

      Nevertheless, Three on the Bund will be opening a new venue November 20, House of Wine (HOW). Marketed as a “boutique Shanghai wine bar,” this venue atop Three on the Bund shares a floor and view with New Heights, and focuses on a niche market — organic French wines. With the success of many other mid-priced venues, glasses of wine starting at HOW start at RMB 55 and bottles at RMB 250 and up.

    • I have been twice to Fu 1088 recently and have not been disappointed. This gem of a restaurant in a refurbished 1920s Spanish-style villa offers some of the best Shanghainese cuisine in town.

      The food lives up to the thrill of the atmosphere. The kitchen, led by local chef Tony Lu, offers a selection of traditional dishes from Shanghai and its surrounding region, beautifully executed, with some more modern concoctions (such as pork ribs in cocoa sauce). Start with the chilled drunken chicken with rice wine shaved ice, and the most delicious xun yu (smoked fish) you’ll ever taste, especially because it’s served warm. For mains, dig into the glorious braised pork with soy and rock sugar, and the deep-fried prawn with wasabi mayonnaise. Two local dishes you’re unlikely to find back home that are also worth trying include huaiyang dazhu gansi (bean curd sheet with garden greens and shrimp in thick soup), and the sauteed water bamboo in soy sauce. Service is very courteous and highly efficient. There is a ¥300 ($43/£22) minimum charge per person, but for spot-on Shanghainese cuisine that is neither too sweet nor too oily, Fu 1088 is well worth the splurge.

      The Shanghai branch of the chain by three-star Michelin chef Martin Berasategui ups the ante for Spanish restaurants in town.Berasategui’s flagship restaurant in San Sebastian, Spain, has three Michelin stars. Restaurant Martin, Berasategui’s first outside of Spain, features his distinctive, contemporary Spanish food as executed by protege chefs Maxime Fanton and Yago Márquez in a charming 92 year old European style mansion that was once French-Japanese fusion restaurant La Villa Rouge (Xiao Hong Lou), and the EMI Recording Studios Which in its days was the biggest recording studio in the East.

      Food-wise, Martin runs on dual tracks. It was originally slated to be relatively simple Spanish cooking: tortilla, croquetas, gazpacho, suckling pig, that kind of stuff. But protege chefs Maxime Fanton and Yago Márquez that Martin sent over are graduates of Berasategui’s San Sebastian kitchen, they’ve added a second menu of the big guy’s signature, modern Spanish dishes — things like an oyster with watercress chlorophyll; an egg cooked at low temperature with a devastatingly rich potato emulsion; and red snapper with crystallized scales (RMB 580 for traditional set menu, RMB 780 for creative).

      Martín Berasategui, uno de los cocineros más influyentes de la alta cocina española, abre su primer restaurante fuera de España,

      El Restaurante Martin en Shanghai está enclavado en el edificio ‘La Villa Rouge’ en su denominación francesa, un bello edificio de estilo colonial ubicado al final de la avenida Concesión Francesa, en pleno parque de Xujiahui, con lago incluido, que se convertirá en el primer restaurante gestionado por un cocinero tres estrellas de la Guía Michelín España en China. Martín Berasategui contará con el trabajo de dos de sus discípulos, Yago Márquez y Maxime Fanton.

      El menú de degustación ha consistido en gazpacho de melocotón con pan “tumaca” y jamón ibérico de Jabugo; huevo con patata rota al aceite de oliva y emulsión ahumada; ensalada tibia de tuétanos y verdura con crema de lechuga y salsa yodada; solomillo de ternera joven con patatas arrugadas y mojo rojo; y de postre un soufflé de chocolate caliente con helado de caramelo y canela.
