When the Japanese design firm Super Potato took on the task of designing a restaurant space in the Grand
Hyatt, there wasn't enough room for a full kitchen and a dining room. The solution: an open kitchen,
envisioned as a showcase for the extraordinarily creative cooking talents of head chef Jin Qiang and his
staff. The performance, far from being a distraction, is a reminder that Chinese food, at its best, is about
craftsmanship and color as well as taste.
It's nearly everything on the menu that's fantanstic, not just the Peking duck, from spicy Sichuan-style string
beans to the passion fruit and pear champagne sorbet. Made in China serves the capital's most palatable
dou zhi (fermented bean puree), excellent mapo tofu(mashed soybean) and the ubiquitous zhajiang mian
(wheat noodles with black bean mince). The Peking duck (RMB 208/whole duck, RMB 128/half) is the
highlight - the presentation and flavors are impeccable. Right next door you'll find the sleek Red Moon Bar,
perfect for an apertif.
